Aubergine and Tomato Casserole
Ingredients:
– 2 aubergine (Large), cut each of them in half.
– 2 cups halved cherry tomatoes
– 1 red bell pepper, chopped
– 1 onion, finely diced
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– Fresh basil leaves for garnish (optional)
Instructions:
1. Oven: Set your oven to 375°F (190°C).
2. Prepare the Eggplants: Arrange the eggplant slices on a baking sheet and lightly brush with 1 tablespoon of olive oil. Season with salt and pepper. Roast in the oven for approximately 20 minutes, turning halfway through, until they are tender and lightly golden. Remove it from the oven and keep it on.
3. Sauté the Vegetables: While the eggplants are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the cut onion and sauté it until soft and translucent, about for 5 minutes. Incorporate the minced garlic and cook for an additional minute until aromatic.
4. Incorporate Tomatoes and Peppers: Add the halved cherry tomatoes and chopped red bell pepper to the skillet. Cook it for almost 10 minutes, until the tomatoes get soften and the mixture becomes slightly saucy in consistency. Season with crushed dried basil, salt, dried oregano, and pepper.
5. Layer the Casserole: In a baking dish, spread a thin layer of the tomato mixture. Place a layer of roasted eggplant slices on top, followed by more of the tomato mixture. Continue layering until all ingredients are used, finishing with a layer of the tomato mixture.
6. Bake: Cover the baking dish with aluminum foil and cook in the oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the top is bubbly and slightly caramelized.
7. Garnish and Serve: Take the dish out of the oven and cool slightly. If desired, garnish with fresh basil leaves.
This casserole is not only delicious but also packed with vitamins and antioxidants. It pairs wonderfully with a side of mixed greens or a small portion of whole grains like quinoa. Enjoy!
