Vegetable and Mushroom Lasagne
Ingredients to prepare Vegetable and Mushroom Lasagne:
1 large zucchini, sliced
1 red bell pepper, diced
1 cup mushrooms, sliced
1 tablespoon olive oil
1 can (400g) diced tomatoes
1 onion, diced
2 cloves garlic, minced
200g low-fat cottage cheese

1 cup fresh spinach, chopped
1 teaspoon dried thyme

2. In a pan over medium heat, warm the olive oil. Sauté onion and than add garlic until they become soft.
3. Incorporate the zucchini, bell pepper, and mushrooms, cooking until they are tender, approximately 5-7 minutes. Sprinkle salt, pepper, thyme and basil on top.

4. Add the diced tomatoes and allow the mixture to simmer for 10 minutes, adjusting the seasoning as necessary.

5. In a separate bowl, combine the cottage cheese with the egg and Parmesan cheese. Fold in the chopped spinach.
